I'm not a vegetablist, am actually very firmly a dead flesh eater, but this recipe will appeal to all vegetablists:

You will need :

Two small heads of cabbage or spring greens. Cabbage is better.
200g finely sliced spuds, skins on.
ten spring onions finely chopped.
three whole heads of garlic, outer skins removed.
At least three teaspoons hot chilli powder
A heaped teaspoon of freshly crushed black peppercorns
Two litres of chicken stock.

Also

A large pan and a liquidiser.

Set the oven to 190 deg and once ready add the garlic on a tray with a bowl containing half a pint of water to stop the garlic drying out, for about 30 mins.

Meanwhile rough chop the cabbage, put in the pan with the chopped spring onions and sliced spuds, plus the spices and stock. Bring to the boil then reduce to a simmer.

When the garlic is soft remove from oven and allow to cool, then snip the top off each clove and squeeze the contents into the soup.

Then liquidize, taste and adjust seasons accordingly. We have it with fresh crusty bread, home made if possible, a little grated mature cheese on top if you're not on a diet.

Ultra low calorie yet very tasty winter fare.
